Could be a sweet yoghurt mix that they use. This shop makes very long kebabs (uses large diameter bread) that is rolled into thin rolls. This shop appears to make a variety of gourmet kebabs too, (mussel, shrimp, etc) 2pacalypsenow but I didn't try any of those.
